Cozy Mug Cakes — Low Carb, Keto-Friendly

I’ve got two very simple mug cake recipes that are great for the fall and upcoming winter weather! Well…not in California haha!

These happen to be low in carbs and high in fat, which makes them keto friendly! Enjoy!

Pumpkin Spice Mug Cake

  • 1 tbsp unsalted butter, melted

  • 1/4 tsp pumpkin spice

  • 1 large egg

  • 1 tbsp sugar (or sweetener of choice such as monkfruit)

  • pinch of salt

  • 20g superfine, blanched almond flour (I love the Kirkland one from Costco)

  • 1/2 tsp baking powder

  • 10g (about 2 tbsp) sliced almonds or 15g chopped walnuts

Dark Chocolate Mug Cake

  • 1 tbsp unsalted butter, melted

  • 1 tbsp dutch-processed cocoa powder

  • 1 large egg

  • 1 tbsp sugar (or sweetener of choice such as monkfruit)

  • pinch of salt

  • 20g superfine, blanched almond flour (I love the Kirkland one from Costco)

  • 1/2 tsp baking powder

  • 10g (about 2 tbsp) sliced almonds or 15g chopped walnuts
